I’m going to start teaching some cooking classes in the not-too-distant future (I have one arranged through Cancer Lifeline and my clinic’s medical director wants me to teach some at the clinic…he’s even talking about getting one of those tilted cooking demo mirrors), so I’ve been poring through my paper stash of recipes and trolling the food blogs looking for ideas of what dishes I might prepare. So many choices!
Here are a few recent favorites:
- Carrot Avocado Salad
- Quinoa with Roasted Beets and Pear
- Butternut Squash and Kale
- Roasted Vegetable and Quinoa Bowl
- Spicy Chickpea and Bulgur Soup
That last recipe looks especially good today…Seattle has had an especially lovely fall, but yesterday it turned cold just like [finger snap]. We’re talking not frost on the windshield, but ice (super fun at 6:15 in the morning…fortunately my darling husband was just arriving home from a run and offered to wield the ice scraper for me).
Bon appétit!
